| Herstellung | Vor dem Trocknen werden die Trauben 'gedippt', d. h. mit einer 5%igen Lösung aus Pottasche (Kaliumkarbonat), biologischem Olivenöl und Wasser besprüht. Die Trocknungszeit wird dadurch auf etwa 3-5 Tage verringert. Die behalten dadurch ihre helle Farbe. Nach der Trocknung werden die Sultaninen gewaschen und sortiert. Um ein Zusammenkleben zu verhindern, werden die Beeren nach dem Trocknen mit biologischem Sonnenblumenöl benetzt. |
